Grilled Salmon and Quinoa Salad
Ingredients:
2 salmon fillets
1 cup quinoa, rinsed
2 cups cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1 lemon, juiced
3 tablespoons olive oil
Salt and pepper to taste
Instructions:
Prepare the Salmon:
Preheat your grill or grill pan over medium-high heat.
Season the salmon fillets with salt, pepper, and a drizzle of olive oil.
Grill the salmon for about 3-4 minutes per side or until it flakes easily with a fork.
Cook the Quinoa:
In a medium saucepan, combine the rinsed quinoa with 2 cups of water.
Bring to a boil, then reduce the heat, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
Fluff the quinoa with a fork.
Prepare the Vegetables:
In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.
Assemble the Salad:
Add the cooked quinoa to the bowl of vegetables and toss to combine.
Drizzle the salad with olive oil and lemon juice, and toss again to coat evenly.
Season with salt and pepper to taste.
Serve:
Divide the quinoa and vegetable mixture onto plates.
Top each plate with a grilled salmon fillet.
Garnish with additional fresh parsley and lemon wedges if desired.
